Tasting Notes
Medium plus bodied with plus acidity and pronounced tannin. Although young, this wine already shows pretty refinement, with delineated flavors of dark cherry, eucalyptus, and violets, followed by more subtle leather, mineral, and clove notes.

The family focus is on a transparent representation of the diverse terroir. At 13 hectares, the vineyard covers two hills and a valley, with varying soil, exposures, and altitudes ranging from 220 to 360 meters.

In the vineyard, Domaine Pavelot relies on “lutte raisonnée” which translates to “reasoned fight” or “supervised control” and means chemical treatments are avoided unless absolutely necessary, and the focus is on natural remedies and biodiversity.
