Tasting Notes
Medium plus bodied with plus acidity and elevanted tannins that show its youthful character, which will require patience but it has the goods. There is medley of red and black cherry fruit, herbal tea, forest floor, and leather along with notes of mineral and spice adding to the complexity.

This puppy is tightly wound but will reward those with patience.

Pinot Noir
100% Pee-NO NWAR
Pinot Noir is arguably the most revered grape variety in the world with origins in Burgundy, France where the best expressions can still be found. Pinot Noir is not only a tough grape to grow, it also shows miniscule differences in terroir arguably more than any other grape variety. Stylistically, it is generally higher in acid and lower in tannin but can vary depending on the location, and winemaking technique. It is very versatile with food, and shows a range of flavor from red and black fruit, floral, spice, earth, and mineral qualities.

The family focus is on a transparent representation of the diverse terroir. At 13 hectares, the vineyard covers two hills and a valley, with varying soil, exposures, and altitudes ranging from 220 to 360 meters.

In the vineyard, Domaine Pavelot relies on “lutte raisonnée” which translates to “reasoned fight” or “supervised control” and means chemical treatments are avoided unless absolutely necessary, and the focus is on natural remedies and biodiversity.
