Chardonnay may be the most versatile white wine grape, often seen as a blank canvas. It displays various flavors and aromas depending on where it is grown and more specifically, how it is made. It can range in Palate Character from Bright & Crisp to Rich & Full depending on the climate. It is also particularly malleable and highly affected by winemaking choices like as malolactic fermentation, lees stirring, barrel fermentation and ageing practices.

Château Cambon

Chablis, france

Inspired by Vincent Dauvissat, Stephane Moreau took the reins of his family estate in the 1990s and quickly saw success before his sudden and unfortunate passing in 2016. His wife Virginie and the assistant winemaker have carried the torch in his absence.

Stephane, and now Virginie, focus on healthy, ripe, and balanced fruit that is biodynamically farmed, hand-harvested and then aged sur lie in stainless steel and large-oak barrels.

Wary of "green" wines, Stephane Moreau sought to make wines with more ripe concentrated fruit than some of his peers but full of vivacity and vineyard character.
