Pinot Noir is arguably the most revered grape variety in the world with origins in Burgundy, France where the best expressions can still be found. Pinot Noir is not only a tough grape to grow, it also shows miniscule differences in terroir arguably more than any other grape variety. Stylistically, it is generally higher in acid and lower in tannin but can vary depending on the location, and winemaking technique. It is very versatile with food, and shows a range of flavor from red and black fruit, floral, spice, earth, and mineral qualities.

Chardonnay may be the most versatile white wine grape, often seen as a blank canvas. It displays various flavors and aromas depending on where it is grown and more specifically, how it is made. It can range in Palate Character from Bright & Crisp to Rich & Full depending on the climate. It is also particularly malleable and highly affected by winemaking choices like as malolactic fermentation, lees stirring, barrel fermentation and ageing practices.
Pinot Blanc

Pinot Blanc is a versatile white grape known for producing crisp, refreshing wines with delicate fruit flavors and subtle floral aromas. With a lighter body and balanced acidity, Pinot Blanc wines often exhibit notes of green apple, pear, and citrus.
Rémi Leroy took over his family holdings in 2006 after graduating with a Masters in Oenology. He farms 9.5 hectares over three villages: Meurville, Bergères, and Fontaine, using only the best grapes, and selling the remainder.
The vineyards in Meurville are divided into two distinctive hillsides on either side of the Le Landion tributary, with exposures to the east and southwest. In Bergères and Fontaine the exposures are mostly south, all with the classic geomorphology of the Côte des Bars, with a majority planted to the Pinot Noir and Chardonnay, with small amounts of Meunier, grown mostly on Kimmeridgian soils.
Leroy produces several different cuvées, including a Rosé and a Blanc des Blancs. While stylistically these wines may vary, there is consistency in the quality, intensity, depth, and transparency of the special terroir of the Aube.
