Riesling is one of the greatest, long-lived white wines in the world, highly expressive of the nuances of its respective terroir. The wines are generally relatively low to moderate in alcohol with crisp acidity and full of flavor and extract. Stylistically, it can vary from bone dry to quite sweet, and with age can develop intense aromatics. Because Riesling is so expressive of the terroir from where it is grown, it can show a potential mix of floral, fruity, intensely mineral, smoky and/or spicy aromas and flavors depending on the soil, climate, and exposure.

Willi Schaefer is one of the best producers of riesling in Germany with a family history that dates back to 1121. With only 4.2 hectares of vines, production is unfortunately small at this benchmark producer.


Located in the town of Graach, there are deep springs that naturally irrigate the vineyard, which consists of steep slate slopes with idyllic south/southwestern exposures—perfect conditions for 100-year-old riesling vines. At harvest the family walks the vineyard and tastes the grapes in order to decide which plots to pick, relying more on instinct than technical measurement.

That practice continues in the winery, tasting the wine during the fermentation and then aging them in 1,000 liter Fuder casks. The results speak for themselves—these wines are perennially some of the region’s most aromatic, distinctive wines with layers of flavor and complexity.
